In order to understand stubborn fat deposits, it helps to think about how your body uses and stores fat. You have fat cells located throughout your body, most of which lie in a layer just beneath the surface of your skin.
Your body converts a portion of the food you eat into fat, and stores that fat in your fat cells. Each cell has the ability to expand and contract according to how much fat is stored. When you consume more calories than you expend, those fat cells expand. When you burn more calories than you consume, they shrink.
